1 Can Diced Tomatoes / With Green Chili’s
1 Can Diced Tomatoes
1 Bag Frozen Corn
2 Cans Organic Black Beans
Finely Chopped Cooked Chicken Breasts or Canned Chicken Breast
Taco Seasoning
6 Stalks Chopped Celery – Organic
1 Onion Chopped
2 Boxes Organic Chicken Broth

Pour Extra Virgin Olive Oil in bottom of Pot, add garlic, celery, onion, taco seasoning & corn and cook for about 5 minutes. Next, add Chicken Broth, black beans, tomatoes, chicken & seasoning and simmer for about 30 minutes.

Dish out a bowl of soup & top with sour cream, shredded cheese & tortillas….. I use Organic Plain Yogurt instead of sour cream (healthier with probiotics) & use soy cheese instead of regular cheese. You can use whatever you like.

Serve & Enjoy!!!

Crockpot Italian Chicken with Veggies


1 package of Boneless Chicken Breasts

1/2 cup of Italian Salad Dressing

6-8 potatoes cut into wedges

1 package of baby carrots

1 cup Romano Cheese, grated

1 stalk of celery or other veggies to taste


1. Place veggies in the bottom of Crockpot

2. Place chicken on top (I also add about a cup of filtered water)

3. Add Italian Dressing, then top off with cheese.

Cover & cook on high for 4-6 hrs or low for 8 hrs.

You can add more ingredients if you are cooking for more people & depending on the size of Crockpot you are using.  I have also used shredded Parmesan cheese if I didn’t have Romano cheese.

3 cooked/ chopped chicken breasts

8 oz frozen corn

8 oz frozen broccoli

5 sliced carrots

3 stalks celery, chopped

1/2 onion

1 tbsp Italian seasoning

1 tbsp garlic

5 cups water

5 oz pkg of noodles

Add all ingredients except the noodles to Crockpot.  Cook low – 6 hours.  Cook noodles according to pkg.  When done, add to soup & serve.  Makes 10 – 1 cup servings.  Stats/Cup=121 calories, 1.5 g fat


2 1/2 (1 lb.) cans kidney beans, drain liquid
2 (1 lb.) cans tomatoes
1 sm. can herb tomato sauce
2 lbs. ground turkey (browned)
3 lg. onions, coarsely chopped
Garlic powder to taste
Hot pepper sauce to taste
1/2 to 1 whole env. chili seasoning (I use McCormick’s)
1 tsp. cumin
Put all ingredients in crockpot in order listed. Stir once. Cover and cook on low for 10 to 12 hours (high 5 to 6 hours).


* 1 lb. ground turkey
* 1 large onion, finely chopped
* 2 garlic cloves, crushed and minced
* 1 large jar spaghetti sauce (such as Ragu in the 1 lb. 10 ounce jar)
* 1 package (8 ounces) no-boil lasagna noodles
* 16 ounces shredded mozzarella cheese
* 1 lb. ricotta cheese
* 1/4 cup milk
* 1 egg
* 1/2 cup shredded Parmesan/Romano cheese
* Salt and pepper to taste

Brown the turkey and add onion and garlic in a little extra virgin olive oil in a frying pan. Drain off any grease.

Add the spaghetti sauce into the browned turkey meat mixture. Mix well.

In a separate bowl, mix the ricotta cheese, milk and egg. Beat until thoroughly mixed and smooth. Then mix in the mozzarella cheese and the grated cheese so that all the cheeses are combined.

Grease the Crock Pot with some oil on the bottom and sides.

Put about 1/4 of the meat and sauce mixture in the bottom of the Crock Pot. Put a layer of noodles on top of that (break or cut them if needed). Put about 1/3 of the cheese mixture on top of that. Then repeat with sauce, noodles, cheese for another 2 layers. Top with meat sauce. Cook on low for 4-6 hours or until noodles are tender.

1lb. ground turkey (browned), 1 can rotel diced tomatoes/chiles, 1 can black beans, 1 can Mexican corn, 1 packet taco seasoning, 1/2 cup water. Brown turkey. Add all ingredients into a Crockpot and set on low 4-6 hours! YUM!!

Double or triple recipe if cooking for more than one!!! Enjoy! :)

Serve with Tortilla Chips & Salsa!


1 lb. Ground Turkey (you can use ground chicken or beef if you prefer)
1 Garlic Clove
1 Tomato Chopped (or a lg. can of tomatoes)
Head of Cabbage
1 onion
4 Cans Kidney Beans

Brown ground turkey…add your favorite seasonings while cooking. (I use the pot that I will be using for my cabbage soup so that I don’t mess up too many pans when not needed) Add some filtered water over browned meat then add chopped cabbage into pot. Boil for about 10 minutes then add all of the other ingredients…you can also add onions or other spices or seasonings that you like. Let simmer for an hour…then ready to eat! Hope you enjoy!

Audra’s Purple Cabbage Soup – Valentine’s Soup
***Note…this soup will be purple due to the cabbage so it becomes a colorful soup with purple, red & dark red…it is YUMMY!!! :) Makes a great “romantic” soup for Valentine’s Day…Enjoy!


1 lb. Ground Turkey (you can use beef if you prefer)
1 Garlic Clove or use Garlic Salt
6 Roma Tomatoes
Head of Purple Cabbage
1 onion – any variety
4- 5 Cans Dark Red Kidney Beans
*I use Organic Produce & Organic Kidney Beans

Brown ground turkey…add your favorite seasonings while cooking. (I use the pot that I will be using for my cabbage soup so that I don’t mess up too many pans when not needed) Add Chopped Onion, Garlic & Tomatoes then cook for a few minutes. Next, fill pot with filtered water halfway & add Cut Cabbage. Boil for about 5-10 minutes then add Dark Red Kidney Beans. Let simmer for 1 1/2 to 2 hours or until cabbage is done…then ready to eat! Salt & Pepper to taste…and it is even yummy with HOT sauce added if you want more of a kick! Hope you enjoy!


Salt & Pepper

Steam beans for 5 to 7 min. on stovetop or in microwave>rinse w/ cold water
Saute onion and garlic in olive oil
Add tomato sauce and oregano>simmer 10 min
Toss beans with sauce and heat through.

This is one of my favorite veggie dishes and it’s soooo…. easy!
It will make a great Christmas dinner side, garnished w/ halved grape tomatoes.

1 lb. Ground Turkey (or if you prefer ground beef or chicken)
1 Onion
2-3 Garlic Cloves
3 Stalks Celery
2 TBS Chili Powder or Taco Seasoning
1/2 Cup Ketchup
2 Cups Filtered Water
4-6 Lg Cans Bush’s Chili Beans (You can also buy the large can of Bush’s Chili Beans at Sam’s)
Your Favorite Hot Sauce – Optional

Note: I used organic ingredients except for the chili beans

Brown Ground Turkey (I use the same pot I will be cooking chili in to cook the meat first…less mess to clean up too) Chop up fresh Garlic Cloves, Onion & Celery…add to meat. Cook for about 5 minutes. Add Chili Powder or Taco Season, Ketchup, Water & Beans. Cook for about an hour. Add your favorite spices & Hot Sauce!!!! Enjoy! ;-)

You can double the recipe to cook for more people or to eat for a few days. It always tastes great as left overs.
